What is a gluten sensitivity?

Gluten sensitivity is not always a mild uncomfortable condition. For me, gluten was destroying my nervous system. I had an extremely painful neuropathy, balance problems and headaches among many other health problems. Giving up gluten has made a huge difference and I don't have celiac disease. Gluten affects much more than the intestine.
My dog was also having neurological difficulties. I took the grains out of her diet and within days she started to recover.
Celiac disease is about 1% of the population. Estimates of gluten sensitivity range from 6-50%.
