You're certainly not the only one who can't, or doesn't want to, eat eggs. If you're baking, bananas and applesauce make a great substitution for the eggs. One egg is equivalent to half a banana or 2 ounces of applesauce. A crumbly, standard tofu is a great substitution for eggs in things like egg salad, quiche. An egg replacer brand that does not contain egg (unlike Egg Beaters) is called Ener-G Egg Replacer.
