Homemade and Fat-Free Creamy Feta Salad Dressings Two Ways

If I told you that you could have big salads tossed with a creamy dressing and it would be fat free, would you believe me? Not only fat free, but extremely low calorie, fresh flavor, and maybe the best dressing you’ve ever had. Let me show you the way.

I prepare a big entree salad for dinner for my family once or twice a week. I swore off grocery store salad dressings years ago because they’re terrible, and frankly, I can whip up a vinaigrette on demand with a flavor that perfectly complements my meal. But I recently grew tired of the vinegar and oil and craved the creamier variety I used to douse my salads in. Inspiration struck.

Picking through the refrigerator, I found feta crumbles, Greek yogurt, and the strawberries and basil I usually add to vinaigrette. These were blended together, without the oil, and the sweetest pink dressing adorned our salads that night. And with that, my creamy feta dressing fixation began. (more…)

Food Blogger Spotlight: Sara Forte of Sprouted Kitchen

I love food, so I find myself naturally drawn to other people who think like me, cook like me and eat like me. Oftentimes, though, I find people who eat drastically different than me and inspire me to eat better, healthier. One of those people is Sara Forte, author of the blog Sprouted Kitchen.

At Sprouted Kitchen Sara shares a “tastier take on whole foods,” and she delivers on that promise with every recipe she creates. After discovering her blog last fall I quickly snagged her Sprouted Kitchen Cookbook and haven’t put it down since. I find myself poring over it on weekends while meal planning, looking for snip-pits of healthy inspiration and meal ideas and I never come up short.

Sara’s husband Hugh captures all of the images for the blog, and each one in itself is a work of art. Go see for yourself. A delicata squash has never been so stunning.

Pomegranate Pistachio Dark Chocolate Bark Makes Valentine’s Day Healthy and Sweet

Calling all chocolate lovers! We have the perfect Valentine’s dessert for you and it just so happens to be healthy, decadent and loaded with antioxidants. Finally, a Valentine treat we can actually feel good about.

Inspired by our editor, I created this beautiful bark last week in preparation for Valentine’s Day. Just because we operate a health and diet website doesn’t mean we don’t crave chocolate once in a while (or every day).

The entire time I was prepping the ingredients I couldn’t wait to take a sample bite of the finished product. The luscious dark chocolate, the salty pistachios and the sweet, crisp pomegranates were sure to be a stellar flavor combination. Sure enough, my suspicions were right. (more…)

Bollywood Star’s Balanced Diet Philosophy Should be Emulated by Hollywood

After reading a recent interview from a rising Bollywood star, here’s to hoping our Western culture can start teaching our daughters to embrace the Indian culture of actress Bhavna Pani.

The Times of India headlined with Pani’s own words, “I never go on a diet.” The beautiful dancer and actress told the news source that she exercises faithfully, but she never diets, and stated that “shortcuts always prove to be disastrous.” These sage words are coming from a 22-year-old who has to be on screen in front of millions. It was really refreshing to hear that she’s embraced healthy living as a lifestyle and scoffed away quick, hard hitting diets that won’t last.

Pani said in her interview that all her exercise comes from dance and body weight training. She mentioned that she dances about 1-2 hours a day while adding in a toning activity like Pilates or yoga on alternating days. She says her routine is effective and does not demand too much time. (more…)

US News Names Best Diets of 2024 with Few Changes Over 2024

Since 2024, US News and World Report has been releasing an annual list of the best diets and this year is no different. That goes for the rankings, not just the perpetuity of the list. It seems the analysis by US News done in 2024 matches identically to the “new” list they released for this year as the top spots in each category are exactly the same as they were last year. While four new diets were added to the top rankings in each category overall, the top two diets for each category remained the same. It certainly speaks to the longevity and consistency of the diets they review.

They look at only 29 diets in eight categories (with the addition of plant-based diets this year) and work with an expert panel of nearly two dozen leaders in the industry, including David Katz, MD, Robert Kushner, MD, and Lisa Sasson, RD. As well, they “mine” medical journals, government research, and other sources to create not only in-depth profiles for each diet but to accurately rank each diet.

According to their announcement, “Every diet received robust scrutiny, and we converted the experts’ ratings to scores and stars from 5 (highest) to 1 (lowest) to construct eight sets of Best Diets rankings.” This year, those rankings are as follows:

Justin Bieber and Hayden Panettiere Ditch Their Vegetarian Diets Over Bad Attitudes and Low Energy

We usually hear about the crazy diets celebrities are on like the Baby Food Diet or the Master Cleanse Diet. Every now and then we’ll hear that a celebrity is actually on a healthy diet like the vegetarian or vegan diet. Many a star has stepped forward to denounce meat, fewer have denounced vegetarianism, putting two celebs in a unique hot seat.

Earlier this year, Justin Bieber tried to follow in his mentor’s footsteps (Usher) by eating an animal-free diet. When Bieber said that he would try a vegan diet, some of his devoted fans, known as “beliebers,” vowed to do the same. Well, Bieber is shocking the world today by ditching his vegan diet. According to Examiner.com, an insider said “Justin ordered a tofu steak and tempeh tacos from Real Food Daily in L.A. and was really grossed out. He made a big show of spitting out the food and making gagging noises.” Apparently friends and family of the pop star wanted him to start eating meat again because he started to become unpleasant to be around. Since Justin ditched his vegan diet, his ‘beliebers’ are following suit.

Or maybe, Bieber will make fans who are vegetarians go back to eating meat? (more…)

3 New Mashed Potato Recipes Get Pimped for Thanksgiving

There is one serious food rule in my family: if my Grandpa asks you to pass the mashed potatoes do not serve yourself on the way over to him. He called that a “mashed potato short stop” and proclaimed if you “short stopped” in the Army the penalty was a scoop of mashed potatoes in your face.

My family takes mashed potatoes very seriously, and even though my Grandpa passed years ago we still uphold his “no mashed potato short stop” rule and have a deep respect for the honorable dish at our Thanksgiving table.

I made a dedication to embark on this makeover with an equally serious devotion. You can remake a mash, but you better be sure it is delicious and worthy of its own set of beloved table rules.

As far as I’m concerned if you start a vegetable mash with extremely fresh ingredients you will end up with something delicious. It seemed only logical then to begin this makeover with a trip to my local farmers market.

Off I went without specific recipes in mind. I allowed the seasonal bounty to inspire. I came home with veggie loot to brag about and knew I was well on my way to a delicious party of mashes.

What resulted were three thanksgiving table-worthy mashes: a twist on the traditional, a Paleo mash, and a whizz-bang-boom masterpiece! (more…)

Los Angeles Adopts Meatless Monday for the Health of its Citizens

Los Angeles has become the largest city in the U.S. to partake in what’s known as Meatless Monday. It’s been a mostly social media-driven national effort by The Monday Campaigns to get people to eat vegetarian meals every Monday.

Friday, November 9, the LA City Council unanimously approved a resolution to adopt Meatless Monday for the city. The council resolution gives statistics showing that more than half of LA County residents are obese or overweight and states that reducing meat consumption can decrease the chances of having health issues. Councilwoman Jan Perry encouraged the motion due to growing health issues such as heart disease and cancer.

“We can reduce saturated fats and reduce the risk of heart disease by 19 percent. While this is a symbolic gesture, it is asking people to think about the food choices they make. Eating less meat can reverse some of our nation’s most common illnesses,” said Perry. “The issue is, how does a local municipality engage in this and how do we create change? If we do it one plate at time, one meal, one day, we are ratcheting down the impact on our environment. We start with one day a week and then, who knows, maybe we can change our habits for a lifetime.”

How to Cook with Artichokes

Artichokes: Where do I begin? As a child I was absolutely terrified by them and as an adult I’m still a little bit unsure of their distinct texture, taste and shape. When I order a salad at a restaurant and it comes with artichokes, I usually manage to eat about half before throwing in the towel. However, I think the problem here is two-fold: 1) I didn’t realize how good they were for you, and 2) I’ve never actually cooked them myself. However, all of that’s about to change. 

Health benefits:  It’s no surprise that artichokes are a staple in the Mediterranean diet as they’re loaded with vitamins C and K, folate, magnesium, potassium and manganese.

Like many other fruits and veggies, artichokes are also high in fiber – nearly 10 grams in one medium choke. Each serving also contains approximately 3-4 grams of protein and less than one gram of fat for a satisfying, healthful indulgence. One of the tricks to getting the most nutrients out of your artichoke is eating the whole vegetable. If you opt only for the hearts, you will inevitably miss out on some of the vitamins and minerals. However, with that being said, the hearts are still worth devouring as they’re no doubt a healthy, low-calorie food.

Nutritional statistics: 1 cup contains approximately 76 calories, 1 g fat, 15 g carbohydrates, 8 g of dietary fiber, 1 g sugar and 5 g protein. (more…)

Eat 120-Calorie Vegan Fettuccine Alfredo to Pimp Your Pasta

If I had a dollar for every time Fettuccine Alfredo came up in a nutrition session with a client I would be a very wealthy woman. It seems to be the dish that is the ultimate counterpoint to healthy eating, the sin that must be confessed. That steamy bowl of rich creamy pasta is not sensible – it is evil, ridiculous, void of common sense, and completely and utterly delicious!

Unfortunately, one bowl piles in about a day’s worth of calories and fat. ONE BOWL has approximately 1200 calories and 75 grams of fat!

The original recipe for Fettuccine Alfredo was created nearly 100 years ago by a man named Alfredo di Lelio in Rome. He created the recipe to please his very pregnant wife who struggled with morning sickness. Butter, heavy cream, cheese, and pasta to the rescue!

This morning sickness cure can now be purchased jarred or frozen and is on nearly every Italian restaurant menu across the country. Fettuccine Alfredo is an indulgence that we tend to “indulge” in way too often.
