I can say that the Fourth of July is my hands-down favorite holiday of the year. It’s smack dab in the middle of summer and everyone is happy. It’s a good-time vibe all day, and usually all weekend when the holiday doesn’t fall on a Wednesday.
Like most Americans, I love the food aspect of these patriotic celebrations. Picnic food has got to be some of the best, but it tends to be some of the worst for us. Just like I had to rethink my go-to beef burgers and swap them for a pretty tasty turkey burger, I had to rethink my sides. Particularly potato salad.
I love potato salad! I used to day dream about that big yellow dollop on my plate. Now I kind of shudder when I see that pail of mayo-mustard mess. I felt like I owed it to myself and my guests to come up with something better, and so I did. (more…)
Father’s Day is just around the corner and we’re getting ready to celebrate our dads the best way we know how – with food; and the healthier it is the better.
While most Americans will be grilling dad a burger or steak or taking him out to eat, we’re opting for a more original, creative and nature-centered meal: a picnic.
Picnics are great for many reasons: they’re low maintenance, casual, portable, leave room for creativity and can be incredibly healthy. Not to mention you get to eat in the great outdoors without a distraction – or cranky waitress – in sight. My office mates and I recently held a lunch hour sandwich-making party. We had all of the fixings, but not a lot of the standards. Mini croissants, Orowheat sandwich rounds, and whole grain bread was piled high with black bean dip, roasted red pepper hummus, almond butter, avocados, sprouts, and Craisins. What we ended up with was a colorful collection of some of the tastiest, boldest, freshest sandwiches any of us have had in a while.
The Simple Mediterranean Sandwich and the Strawberry and PB Sandwich were two stand-out favorites, and all of the vegetarians loved the Bold Black Bean Sandwich.
