Portland houses the International Test Garden for roses, which basically means there are thousands of different varieties of the fragrant flower planted in a handful of large gardens around town. Thanks to our warmer than usual weather most of these are already in bloom, so earlier this week I decided to organize a picnic among the roses. To start I made a salad topped with strawberries straight out of my garden (those are already in season too!). For the main I made a tasty dish with campanelli noodles, caramelized onions, fresh herbs, goat cheese, and a little bacon. While I thought of this as a fancy pasta dish my boyfriend pointed out that it was really just fancy mac and cheese. Tom-a-toes Tom-ah-toes, people!
This dish was a hit and simple to make, but healthy it is not. For a 1/2 pound serving (which is a small bowl-full) this dish clocks in at 320 calories. Not awful at face value, but when you factor in the dish contains 7 grams of saturated fat and 850 mg of sodium—basically 35% of your recommended daily allowance of each—you can see why this was a meal I definitely needed to burn off, stat! It’s easily arguable that many families have a box of macaroni and cheese mix in their cabinets right now. It’s basically a staple in most homes, especially those with children. Many of us grew up with mac and cheese, and not just any brand, but specifically the blue box, Kraft Macaroni and Cheese. Today the brand is just as popular, but those who read labels have discovered that this food contains some of the most family unfriendly ingredients and they want it changed.
Vani Hari runs the website Food Babe and Lisa Leake is the voice behind the blog 100 Days of Real Food. Together these two women have made some noise as they have brought the ingredients of Kraft’s mac and cheese to light. The American version of this boxed food contains artificial food dyes, Yellow 5 and Yellow 6. Hari and Leake are out to change this.
The two women have created an online petition to the Kraft company asking people to understand the dangers of the dyes and then sign the petition to get them removed. The information around the petition states that the mac and cheese in the UK does not contain the dyes. They were removed when the public cried out. The idea behind most recipe makeovers is to take out or replace the “naughty” foods with “lighter” versions in order to reduce the big numbers from calories and fat. While reducing numbers is a piece of the health puzzle it doesn’t tell the whole story. Specifically since high fat/high calorie items are frequently replaced with chemically processed or highly processed “lite” versions which leaves a recipe that, quite frankly, can have a negative impact on your overall health.
This recipe makeover, however, is based on a non-reductive food philosophy; one that doesn’t just rely on taking high calorie foods OUT but focuses on adding the right foods IN. Adding in real whole foods, clean foods, foods as close to nature as possible.

Pimp That Recipe Mission 1: Macaroni and Cheese
I am jumping right out of the gate with a tough one. Macaroni and cheese is delicious. There, I said it. I understand why many of my clients are in love with this rich, creamy indulgence. But, holy cow traditional macaroni and cheese is not a waist-friendly food. It typically weighs in at 600 calories and 30 grams of fat per serving, with very little micro-nutrients to speak of. Additionally, the standard white pasta and heavy dairy will wreak havoc on gut health, blood sugar stabilization, and your body’s ability to effectively burn fat. My kids are huge lovers of macaroni and cheese. I’ve tried to get them hooked on homemade, healthier versions, but they still beg for the boxed, orange dust variety. Even more than the regular cups, though, they love the microwaveable single serve cups, and I will buy them once in a while. They aren’t a great source of nutrition; in fact, I don’t equate them with a healthy choice at all, but I’d rather they eat a cup of pasta and cheese than a bag of chips. Today’s recall might be enough to change my mind, however.
Alaska state officials have announced the recall of three varieties of Velveeta Shells & Cheese microwaveable cups due to the fact that they might contain small bits of wire bristle.
