Food Blogger Spotlight: Liesl from Lieslicious

Liesl resizeAt Diets In Review, one of my responsibilities is to seek out food bloggers who are interesting, have a great voice and create healthy recipes. This week, Liesl Maggiore from Lieslicious, made my job easy.

Lieslicious is not cluttered or fussy. The header is a close-up picture of a paper towel, for heaven’s sake, but once you dig in, you realize that Liesl approached her website creation the same way she approaches food – clean, simplistic and lovely.

We asked this wife, mama, animal-enthusiast and self-described, “booty-shaker,” a few questions about her blog, and she was kind enough to share.

Why did you start your food blog? Working as a food stylist, I have been exposed to amazing recipes and surrounded by inspiring, creative people for years. I guess they rubbed off on me and I realized I have my own stories to tell through food. I wanted to share the foods I was making every night in my own home, and hopefully inspire other families to get cooking!

Today’s foodie spotlight is shining on Pamela, the saucy minx behind My Man’s Belly (MMB). This is not your Nana’s online cook book, unless she likes eye candy in the blog header and cookies nick-named Unicorn Farts. If so, your Nana rocks!

We asked Pamela to tell us more about her tasty, unique site:

Why did you start your food blog? I had been working as an internet consultant for a few years and when the economy took a hit in ’08-’09 I found myself clientless. Since I’ve always enjoyed cooking, and I was doing it pretty much everyday, I thought I’d start up a food blog. It was a way to help fill my days and gain some new internet skills at the same time.

Food Blogger Spotlight: Abby from The Frosted Vegan

People, I have five words for you: Cinnamon. Raisin. Loaded. Almond. Butter. This is just one of the many recipes that has me adoring The Frosted Vegan this week.

In the past, if you’ve avoided vegan websites because you thought they were all about 101 ways to cook tofu, think again. Abby has been in the kitchen helping her Dad and Grandma since she was old enough to reach the countertop. Her blog is loaded with delicious recipes, vibrant photos and stories about the inspiration behind each dish.

Recently we asked Abby to tell us a bit more about The Frosted Vegan.

Why did you start your food blog? I have always wanted to start a food blog, but I finally decided to take the plunge last year after I moved away from my hometown and I wanted to share dessert recipes with my dad. I honestly wish I’d started sooner, but already so thankful for the community I’ve become a part of, food bloggers are pretty awesome people.

How would you describe your approach to eating/health? I eat a primarily vegan/plant-based diet, occasionally eating cheese or dairy in baked goods, but I try to stick to whole foods as much as possible. I believe in indulging in moderation and that nothing should be “off limits”, if you want it, have it! I connect more with how I feel after I eat something, if I feel bad after, I probably won’t eat much of it again.

Food Blogger Spotlight: Jason from Cook Train Eat Race

Lacy Hansen is a fellow contributor at Diets In Review. She’s also a fantastic mama and running fiend who spends her spare time training for marathons and encouraging other runners, especially those newbies who want to quit after the first mile. Recently, she suggested that I contact Jason Bahamundi from, Cook Train Eat Race. The blog is more than a collection of recipes, it’s a site that focuses on helping athletes improve their performance.

Why did you start your food blog? My blog started out as a training log and I thought at one point: What will I blog about once this race is done? I needed to re-brand it. At that point I spoke with a web developer and out of that conversation came my passion for eating a whole foods diet while training and racing endurance events. One conversation sparked the Cook Train Eat Race brand and that is my blog today.

Food Blogger Spotlight: Dana from Minimalist Baker

For Dana and her husband, John, minimalist is not just a catchy buzzword in the name of their blog, it’s something they’ve incorporated into every aspect of their lives . In an effort to pursue the things they’ve decided are most meaningful, they make a conscious decision to keep their little corner of the world as clutter-free as possible. With Minimalist Baker, they’re proving that eating healthy doesn’t have to be complicated, expensive or take time away from other people, projects or pursuits that are just as important. That is not to say the recipes are boring, oh my, no. Currently on the home page, Dana has a ridiculously tasty Pumpkin Spice Latte Waffle recipe. As Billy from Wit & Vinegar would say, “I want to smash my face in it.”

Recently, Dana spoke with us about how Minimalist Baker became a thing – a good thing.

Why did you start your food blog? The short answer is, I love food. But really, I started Minimalist Baker because it’s the way I cook and bake on a daily basis. I naturally tend to steer clear of recipes that require too much time or odd, expensive ingredients. For this reason all of the recipes on our site require just 7 ingredients, one bowl or one spoon, or just 30 minutes.

Food Blogger Spotlight: Chanie from Busy in Brooklyn

Chanie from Busy in BrooklynHave you ever clicked on a food blog for one quick recipe, then an hour later you realize you just went down the rabbit hole of deliciousness? That’s what happened to me with this week’s Food Blogger Spotlight, Chanie from Busy In Brooklyn.

I’ve decided Chanie is the friend we all love to visit because her house is warm and welcoming, she always has a new craft to show us or a delicious recipe she wants us to taste.  While we’re chatting about the latest kerfuffle at the school PTO meeting, she’ll suddenly offer a new time-saving kitchen idea she’s discovered.

I’ve never met her in person but I have a whole scenario going in my head. It borders on stalking. On that note, it’s probably time for Chanie to tell us about Busy In Brooklyn in her own words. . .

Why did you start your food blog?

I had just given birth to my third child and going back to work wasn’t an option for me. I had all this creative energy that I needed to put into something. As a stay at home mom who was trained in web design and loved to write, cook and craft, a blog just made sense. I never imagined it would grow as much as it has.

How would you describe your approach to eating/health?

I believe everything in moderation. I love to cook healthy meals with a focus on seasonal, from scratch ingredients, but as a busy mom that’s not always easy. I have learned to strike a balance somewhere in between. It’s OK to have a cookie every now and then, and it’s also OK to use jarred marinara sauce in a pinch!

Food Blogger Spotlight: Camila of Como Come Cami

The first thing you notice when you visit Como Come Cami is the text. Unless you’re lucky enough to be bilingual you might not understand at firstComo Come Cami but don’t panic, just scroll. Scroll down the page and you’ll find the Spanish text has been translated to English so you won’t miss a thing. Born in Argentina, Como Come Cami founder, Camila Jurado started traveling when she was 10 years old. She’s lived in Honduras and Buenos Aries but she graduated from a college in Savannah, Georgia. I’d love to know if her Spanish accent took on a southern twang.

Camila created her vegetarian-inspired blog to connect with other vegans and share the creative recipes she’s gathered from her travels. More about Camila and Como Come Cami:

Why did you start your food blog? I always liked cooking but became more passionate about healthy foods and ingredients once I became a vegetarian. I started this site with the idea of sharing healthy recipes and travel with a vegetarian approach. I love traveling, discovering new ingredients, buying vintage plates, reading cookbooks and taking photos.

Food Blogger Spotlight: Billy from Wit & Vinegar

Where can you find tasty recipes, clean stylish food pics, Moses the dog, the phrase, “voom voom shebang,” a generous weekly roundup of other food bloggers and a Beyonce’ video? At Wit & Vinegar, of course. W&V is officially my favorite food blog right now and not just because the author, Billy, says things like, “MTV True Life” when he wants to be serious and makes Real Housewives references while he ‘s describing his latest foodie find.

Wit & Vinegar is Tina Fey meets Bobby Flay! My only question is, when will the Food Network knock on Billy’s door and offer him a cooking show? I can see him in the kitchen with Moses at his feet while he whips up a new froyo recipe and comments on the playlist he’s prepared for the episode that blares from the iHome behind him while a disco ball turns overhead. YES! I would totally watch that.

Food Blogger Spotlight: Jenny from Nourished Kitchen

jenny cropAt Nourished Kitchen the motto is “Reviving traditional foods,” but for Jenny and her husband, it’s not just a catchy slogan, it’s a way of life. Together, they manage a farmers market in Colorado where they pride themselves on connecting small family farms, providing free nutrient-dense foods to low-income residents and funneling sustainably grown local products into the community food bank.

The recipes shared on Nourished Kitchen run the gamut from warm and savory to absolutely adventurous. Have you ever cooked with ghee, sprouted spelt, rendered duck fat or created your own fermented food starter? In the Nourished Kitchen Shopping Guide, Jenny describes some of her more creative ingredients and guides readers on where to find them. The site also offers meal plans, workshops and online cooking classes.

Food Blogger Spotlight: Colleen from Colleen’s Kitchen

Colleen Fields CropA few months ago we introduced readers to Colleen Fields on our True Weight Loss segment where she inspired us with her 124-pound weight loss. By utilizing a whole body approach including food journaling, exercise and consulting with nutrition experts, Colleen explained how she learned to live a healthy lifestyle, which in turn, whittled down her waistline.

Along the way, Colleen discovered she was not only changing her body, she was really enjoying the new recipes she was creating, and decided it would be worth the time to share. Her blog not only makes you want to eat right off the screen, she also shares helpful recipe tips and tons of nutritional information so you know exactly what you’re eating.

Why did you start your food blog? While going through my weight loss journey, my cooking completely changed and I also found myself becoming a healthy lifestyle evangelist. I started my blog to show people that healthy cooking and eating is really easy and can taste good too, it doesn’t mean relegating yourself to a life of “rabbit food.”

Food Blogger Spotlight: Maria Guadagno from The Bombshell Blueprint

Why did you start your food blog? To show people that healthy food should taste better than good, you just have to know how to prepare it! I also wanted to teach people that food does more than just fulfill our hunger, it can actually change the way we look and feel. I often include a benefits section with each recipe outlining what each food does for our skin, health, and energy.
