Celebrate Spring with a Batch of Carrot Cake Muffins

Let’s be honest, muffins are just breakfast-approved cupcakes. But why does dessert get to have all of the fun? There’s really not an answer so we made one up in the form of a wholesome carrot cake muffin for breakfast. Trust us on this one.

I don’t even like carrot cake, and it was all I good do to eat just one of these. So, maybe I do, in fact, like carrot cake?

With spring’s arrival, it’s hard not to lunge head-first in to the freshest produce around. Carrots are an early arrival, ready for picking in April and throughout the summer months. Whether brunching, celebrating Easter, Mother’s Day, or just looking for a better weekday breakfast, these muffins are a bright addition to your menu!

This recipe has all the components of a good muffin recipe and a good cupcake recipe and you get to have it at breakfast without any awkward self-doubt. Wholesome carrots, sweet pineapple, and warm vanilla combine with whole wheat flour to make a pretty darn healthy muffin.

This Green Tea Power Smoothie is the Ultimate Power Breakfast

Smoothies are the ultimate power breakfast, in my opinion. In one easy and portable drink, you get multiple servings of fruit and vegetables plus protein so it always lasts you till lunch. And no matter what the ingredients are it always ends up tasting delicious, which makes me think my blender has magical powers.

Red wine was fine to keep us a little warm and cozy all winter, but now it’s time to chill out! Sangria is one of my favorite summertime indulgences, partly because it’s a healthier way to imbibe when I’m by the pool. No really, it’s true! Caprese Grilled Cheese is a Healthy Twist on an Italian Classic

The first time I ever tried a caprese salad was when I was visiting my much-more-sophisticated-than-I older cousin Billy Jo. She and her husband own an exquisite home in Houston and my sister and I were down for a visit nearly a decade ago now.

Before dinner one night, Billy pullled out the ingredients for a caprese salad – fresh mozzarella, gorgeous roma tomatoes, huge stems of basil, and a little balsamic vinegar.

Never having seen such an adventurous flavor combination before, I watched closely as she meticulously layered the cheese with the tomato, and then the basil, over and over again until the plate resembled the Italian flag. A drizzle of balsamic vinegar finished it off before we all claimed our portion. Admittedly, my then 16-year-old self didn’t appreciate the robust, fresh flavors. But now, it’s one of my absolute favorite Italian bites. This “grilled cheese” sandwich is an homage to that salad with a bit more heartiness and the ease of portability.
