Celebrate Spring with a Batch of Carrot Cake Muffins

Let’s be honest, muffins are just breakfast-approved cupcakes. But why does dessert get to have all of the fun? There’s really not an answer so we made one up in the form of a wholesome carrot cake muffin for breakfast. Trust us on this one.

I don’t even like carrot cake, and it was all I good do to eat just one of these. So, maybe I do, in fact, like carrot cake?

With spring’s arrival, it’s hard not to lunge head-first in to the freshest produce around. Carrots are an early arrival, ready for picking in April and throughout the summer months. Whether brunching, celebrating Easter, Mother’s Day, or just looking for a better weekday breakfast, these muffins are a bright addition to your menu!

This recipe has all the components of a good muffin recipe and a good cupcake recipe and you get to have it at breakfast without any awkward self-doubt. Wholesome carrots, sweet pineapple, and warm vanilla combine with whole wheat flour to make a pretty darn healthy muffin.

Make S’more Cupcakes with Chocolate Cream Cheese Frosting to Survive Six S’more Weeks of Winter

Has this been the longest winter ever? It’s starting to feel like it. Currently it’s a -21 wind chill outside and I’m starting to convince myself the sun may never come back; summer will always be a distant fond memory.

Like S’mores. That little campfire treat is one time I put my guard all the way down and say screw it! Gooey marshmallows, melty chocolate (I always splurge and use dark chocolate), and that crispy little graham cracker turn any dull summer night in to an instant memory maker. And right now, as I watch another winter storm swirl around the backyard, I’m clinging to those sweet memories of last summer to keep me warm.

Another way to keep warm? Baking, duh! All that batter beating and pre-heating turns the kitchen in to a little den of coziness. A den of coziness with cupcakes!

And not just any cupcakes, but big, fat S’more cupcakes.

Summer Reading List: Yummy Beach Reads with Recipe Pairings

To say I’m an avid reader is an understatement. If I’m caught up in a story, I tend to shirk important things like laundry and a reasonable adult bedtime. My husband may have to wear an Old Navy T-shirt to work because his company Polos are waiting in the hamper, but at least I’ll find out how the latest Gillian Flynn novel ended. Or maybe I won’t. That Gillian Flynn, she’s an enigma.

Some people prefer to read in the winter, but I think summer is the perfect time to inhale books because there are so many places you can go. Take your novel, Kindle, NOok or other word-devouring device and hit the beach, prop yourself up at the pool, plant your behind under a shady tree at the park, swing in a hammock, or take over the kids’ treehouse. In fact, the only thing more enjoyable than reading in the summer is eating! So, let’s do both, shall we?

Hostess Wants You to Celebrate Cupcake Week in a Sugar Coma

Happy Cupcake Week! Let’s celebrate with a nice sundae, and then next week, we can celebrate Run on the Treadmill for 10 Hours a Day Week!

Gourmet cupcakes have become all the rage, but Hostess cupcakes will always be the original, offering delicious little treats in one easy to eat package.

While an occasional indulgence is encouraged for mental health and for the safety of others around you, it isn’t an excuse to go buck wild. The Saturday of Memorial Day weekend is the unofficial beginning of wedding season as couples across the country take advantage of the warmer weather and higher likelihood of sunshine to tie the knot. While the onslaught of summer weddings might tickle your inner romantic, they can create a hefty dilemma for dieters. The food served at weddings is typically high in calories and fat – and that’s even before you consider the cake.

According to Frost Magazine, a piece of wedding cake can set you back approximately 650 calories – which certainly won’t help you snap into shape for the summer swimsuit season.
