Let’s be honest, muffins are just breakfast-approved cupcakes. But why does dessert get to have all of the fun? There’s really not an answer so we made one up in the form of a wholesome carrot cake muffin for breakfast. Trust us on this one.
I don’t even like carrot cake, and it was all I good do to eat just one of these. So, maybe I do, in fact, like carrot cake?
With spring’s arrival, it’s hard not to lunge head-first in to the freshest produce around. Carrots are an early arrival, ready for picking in April and throughout the summer months. Whether brunching, celebrating Easter, Mother’s Day, or just looking for a better weekday breakfast, these muffins are a bright addition to your menu!
This recipe has all the components of a good muffin recipe and a good cupcake recipe and you get to have it at breakfast without any awkward self-doubt. Wholesome carrots, sweet pineapple, and warm vanilla combine with whole wheat flour to make a pretty darn healthy muffin. (more…)
While preparing breakfast for my family one Sunday morning I realized we had only sweet potatoes and not any red skin potatoes — my go-to for a hearty weekend meal. I thought our hopes for hash browns were dashed. However, I decided to give the sweet potatoes a whirl and venture beyond our typical baked sweet potato comfort zone.
They shredded easily, and I dressed them up with just a little freshly grated Parmesan and orange zest before browning on the stove top. What I got was a gift from the breakfast Gods and a perfectly crisp, wonderfully flavored complement to an otherwise ordinary meal. (more…)
Smoothies are the ultimate power breakfast, in my opinion. In one easy and portable drink, you get multiple servings of fruit and vegetables plus protein so it always lasts you till lunch. And no matter what the ingredients are it always ends up tasting delicious, which makes me think my blender has magical powers.
Once I discovered you could add spinach to smoothies without altering the taste, my morning breakfast was forever changed. In this smoothie, we add spinach and green tea powder, or “matcha,” which contains more antioxidants than brewed green tea, raspberries and blueberries combined!
In other words, this is one of the healthiest smoothies on the block! (more…)

Women’s-cut shirts are available in hot pink for small, sunshine yellow for medium, and bright green for large. These are much more fitted through the shoulders and waist. American Apparel calls this fine jersey short-sleeve shirt “The softest, smoothest, best-looking T-shirt available anywhere.” We tend to agree.
Men’s/Unisex shirts are available in hot pink for small, sunshine yellow and baby blue for medium, bright green and baby blue for large, and ash grey for xl and xxl. For men and women, these shirts offer a more comfortable fit while still being American Apparel’s softest, smoothest T-shirt.
We really love food that’s fresh, homemade, wholesome, and pretty. So we mixed all of that and whipped up our first e-cookbook, a collection of our 13 best breakfast and brunch recipes. My daughter and I make pancakes on Saturday or Sunday every weekend. We usually do this in our pajamas and we always make a disaster zone out of the kitchen. It’s delicious bonding time that I wouldn’t trade for anything. Except maybe chocolate. But with these pancakes, absolutely no sacrifices are made.
The two of us love chocolate, strawberries, and pancakes so it seemed that marrying these ingredients would be an exciting way to get out of our standard blueberry pancake rut. We were pleasantly surprised. She enjoyed dropping her favorite fruit in to the batter and I enjoyed indulging in something at breakfast that beat just about any dessert I’d had recently.
In this recipe, you get to have a rich, satisfying serving of chocolate without overdoing it, all the while filling up on a whole grain pancake loaded with fresh, juicy strawberries. (more…)
