Raisin and Nut Quinoa Bowl – A Mediterranean Meal for Endurance Athlete Foodies

Many endurance athletes, myself included, find ourselves stuck in ruts when it comes to recipes and meals. We tend to have our staples that provide the nutrients we need to sustain our training, but those staples can get boring and overdone. The challenge to seek out new recipes is good, but searching a foreign region’s menu, was an extra, albeit fun, challenge.

With the mission of choosing a recipe from a specific country in the Mediterranean, a small geography lesson was first required. I think many of us don’t realize that the Mediterranean is more than a portion of Italy and the country of Greece. There are 21 countries that comprise the region. They all share similar ingredients in their recipes, yet they all deliver a unique flair to the table. I got the joy of researching the recipes of Egypt.

The first step was just familiarizing myself with the cuisine of the country. True to Mediterranean food, there were many minced meats, shish kabobs with sides of tahini and pita. Some less common foods included grilled pigeon, fried perch and tuna, and stewed beans for breakfast. While runners need protein, pigeon was not a source I was opting for this time. (more…)

Race Me, I’m Irish – The Best St. Patrick’s Day Races in the Country

You wouldn’t know it by looking at me, but I’m about as Irish as they come. For whatever reason, my sister got the red hair, then I gave up my maiden name, and unless you are my husband, my “Irish temper” stays under wraps the majority of the time. However, whene March 17 rolls around, I take that time to embrace my lineage that makes me who I am. It used to only mean wearing green. Then I became a runner and the day took on a whole new celebration. Now, most of my celebrations include a race and some of the best food the world has to offer!

There are fun runs, shorter races, long miles, and everything in between when it comes to St. Patrick’s Day race options. Some are clever and offer a 17K or Lucky 7K. Many others like The Leprechaun Lope in Salt Lake City, Utah offer some seriously silly awards for best Irish costume or fastest centipede, which is four runners linked together by a common costume. Not to mention the various distances from 2 mile to 10K have hidden leprechauns along the course for you to spot. (more…)

Moms Petition Kraft to Get the Dyes Out of Our Macaroni and Cheese

It’s easily arguable that many families have a box of macaroni and cheese mix in their cabinets right now. It’s basically a staple in most homes, especially those with children. Many of us grew up with mac and cheese, and not just any brand, but specifically the blue box, Kraft Macaroni and Cheese. Today the brand is just as popular, but those who read labels have discovered that this food contains some of the most family unfriendly ingredients and they want it changed.

Vani Hari runs the website Food Babe and Lisa Leake is the voice behind the blog 100 Days of Real Food. Together these two women have made some noise as they have brought the ingredients of Kraft’s mac and cheese to light. The American version of this boxed food contains artificial food dyes, Yellow 5 and Yellow 6. Hari and Leake are out to change this.

The two women have created an online petition to the Kraft company asking people to understand the dangers of the dyes and then sign the petition to get them removed. The information around the petition states that the mac and cheese in the UK does not contain the dyes. They were removed when the public cried out. Curious why they were left in the American product? Hari and Leake are too. (more…)

To Lose Weight, You Have to Build More Muscle

We all have that friend. The skinny one who eats whatever they want and never exercises. We all secretly dislike them for this trait and at the same time, wish we could be like them. New research is showing that they might be in a bad position, even worse than an overweight person who hits the gym. As scientist Bente Pedersen said this week, “It’s much better to be fit and fat, than skinny and lazy.”

Pedersen contributed along with many other professionals in Bill Gifford’s article for Outside this week. The article focused on more truths that have been revealed about fat. The report was lengthy but it highlighted some important misnomers about fat. Most know that we have “good” fat and “bad” fat, or subcutaneous fat and visceral fat. The good fat is more or less padding, while bad fat builds up in our mid-sections and can infiltrate our organs. A picture of fat invading muscles like the marbling of beef was used to describe how visceral fat can affect the inactive, not just the obese.

This bleak outlook of how fat can literally take over was explained further by Gerald Shulman, M.D., a diabetes researcher at Yale who contributed to the Outside article. Shulman explained how the amount of fat one has isn’t the problem, more so, it’s how the fat is distributed. He explained how fat build up in areas like the muscle and liver, or places it simply should not be, is when ailments like type 2 diabetes arise. (more…)

“Grease Puck of Dough” is a Better Name for Pizza Hut’s Big Pizza Sliders

Is there anything more American than pizza? Well, specifically, Pizza Hut’s version of the Italian dish? Maybe the only way Pizza Hut could make the famous food more American is make it in a “fun size.” Well, this year, they’ve done just that. Pizza Hut recently introduced Big Pizza Sliders. So what’s the deal? Are they a better option? Or just another fast-food gimmick?

Well, let’s start with the stats. The Big Pizza Sliders are sold as three sliders for $5 or up to 9 sliders for $10. Consumers can mix and match and get up to three combinations of up to three toppings each. They end up being about 3.5 inches in diameter and can range from 230 calories for a plain cheese slider, up to 350 calories for a beef or sausage slider. The fat content ranges from 8-19 grams depending on toppings. (more…)

Carnie Wilson Celebrates a 40-Pound Weight Loss Following Lap-Band Surgery

There are many celebrities we’ve watched struggle with their weight through the years, and Carnie Wilson is no exception to this group. However, Wilson may be unique as she has been very candid about her struggles. Wilson has gone up and down in size and even broadcasted her weight loss surgery. As she continues to fight her battle with weight, Wilson remains in the limelight, not the shadows.

This week, Carnie’s making news as she celebrates a 40-pound weight loss since doing her second gastric bypass surgery last January. She told PEOPLE that she isn’t just relying on the surgery to carry her through, but working out regularly via the treadmill, walking and weight training sessions three times each week. The Approved Fish and Seafood List for Pregnant Women

There seem to be so many rules when it comes to diet during pregnancy. There are are many “don’ts” as well as “you musts” when it comes to foods that promote the baby’s and mother’s health. One of the trickiest areas for pregnant moms is the issue of fish consumption. On one hand, moms are told to get a healthy dose of fish for the omega-3s and other nutrients. Yet, on the other hand, moms are told to watch out for too much fish as the mercury levels could be dangerous to the baby. So, what’s a mom to do? Thankfully, there are some answers.

According to the Mayo Clinic, fish and seafood are touted as a great source of protein, iron, and omega-3s. All of these nutrients are important in development of the baby, specifically brain development. However, regular consumption of fish high in mercury can lead to a build up in the bloodstream which can eventually damage a growing baby’s brain and nervous system.

To handle this conundrum the FDA released guidelines for pregnant mothers regarding the mercury levels in fish. The guidelines state that no more than 12 oz. of low mercury fish should be consumed on a weekly basis. Fish in the “highest” mercury level category should be avoided completely and those that fall in the “high” category should be kept to three 6-oz servings per month. (more…)

Health Care Tax Deductions You Can’t Afford to Overlook

If you’re like many Americans, doing your taxes is a confusing chore. Deductions are crucial elements to filing taxes, especially if you’re expecting a return. However, few people know about all their options, especially their health deductions. And as we move into 2024, the new Affordable Care Act will cause even more changes to health deduction section of your tax forms, but not as much as you might think right away.

“Most major changes brought by the Affordable Care Act will come in 2024,” advised Jean Chatzky, finance expert and journalist whose Jean Chatzky’s Money School debuts this April. However, there are a few things that Chatzky advises taxpayers watch for this year:

  • The contribution limit for Flexible Spending Accounts has been revised downward, to $2,500 beginning in 2024. There was no limit before, though most employers capped it at $5,000.
  • Medicare payroll taxes may increase for some taxpayers. Those who earn over $200,000 as an individual or $250,000 as a couple will pay 2.35% to medicare. Those who earn less will continue paying the current rate of 1.45%.

Where taxpayers can see the biggest advantage will be in their medical-related deductions.

“Many taxpayers assume they can’t reach the 7.5% threshold to deduct medical expenses, but you might be surprised if you add it all up and include everything the IRS allows,” advised Chatzky. She provided a lot of insight on the common oversights we make that can and probably will push you to the 7.5%  threshold. (more…)

Break a Sweat with This Grammy-Winning Workout Playlist

Last night was another banner night for Hollywood as the best of the best strutted their stuff on the red carpet for the Grammy Awards. Wardrobes were discussed, performances were made, and lots of gossip was a buzz.

All those issues aside, a lot of great music was honored and many worthy artists walked away with a Grammy. It’s always a great look back at the year to recall what was playing every time you got in the car or for that matter went for a run. No matter where you listened, Grammy winners are great fodder for a one heck of a gym playlist.

This week run it out, feel the burn, or give it just a little bit more to the tunes of some of the best music of the past year.

Somebody That I Used To Know by Gotye Featuring Kimbra.

This jam was all over the place this time last year. The artist walked away with record of the year, best pop duo/group performance and Gotye scored best alternative music album.

Boy Scouts Sell GMO-Free Popcorn for a Healthier Food Fundraiser

If you haven’t noticed, The Girl Scouts have hit the streets with their cookies this month. They’ve opted for a throwback twist this year as many girls are pulling wagons with cookies ready to deliver on the spot. It may become their biggest sales year yet. Cookies on demand, at your door? Pretty tough to say no to a Thin Mint when it’s literally in your face. Unless of course, you’ve been reading more about what’s actually in those cookies. That may scare you off of Carmel Delights for life.

But, what about the girls’ counterparts? The Boy Scouts sell popcorn every fall. Is their product any better? They are, after all, selling corn, the biggest genetically modified (GM) crop in this country. And the law states no one has to label whether or not a product contains genetically modified organisms (GMOs). And if you search a package of Boy Scout Popcorn, the Trails End Brand, you’ll see no mention of GMOs on the labels. Are our girls getting an unfair rap? Are the boys being just as irresponsible with what they’re selling to the public?

It appears not, at least on the GMO front. Elizabeth Weaver works with Weaver Popcorn Company, Inc. They are the distributor and producer of Trails End Popcorn, the exclusive Boy Scout brand. Candy-Free Valentine’s Day Treats Kids Will Fall in Love With

If you’re a parent, Valentine’s Day means your kid will be offered a tremendous amount of sugar right before he’s sent home from school. Valentine’s parties are tough. You want to send a great treat, but if you’re like me, you have a conscience and you can’t send sugar bombs to kids, it’s just not right.

Never fear, just because you choose not to send unhealthy treats to school, doesn’t mean you can’t be the star of the class party. I’ve had to get creative over the years, but I’ve seen first hand that most kids actually like a unique party favor or a savory healthy snack. Many choose it over the heap of candy being loaded into their Valentine mailbox.

Here are several candy-free ideas to keep you and your kid on track this Valentine’s Day.

Fruit and Veggie Trays. Yeah, it doesn’t sound that amazing, but kids actually like most fruits and vegetables, they’re just not offered very often. I’ve watched a herd of third graders make quick work of a fruit tray and my heart smiled. If you want to add some extra holiday fun, try making your fruit heart shaped. Strawberries can easily be sliced into heart-shaped medallions or melons can be formed into the heart shape as well.

Kind Bars. Have you tried these yet?! You’re going to have a hard time sending them to school because they’re just that good. The KIND bars are mostly nut based and often have dried fruit with them.
