Vegetarian for a Week Challenge – Day Two

We’ve made it into day two of our vegetarian for a week challenge, and so far so good. Yesterday seemed to go more smoothly than day one, mostly in that the feelings of hunger all day were absent.

Day Two Vegetarian Menu

  • Breakfast – egg white veggie omelet. This is a staple around here, I have this most mornings anyway. A very filling and nutritious way to start the day. Served with a banana and cup of skim milk.
  • Lunch – tuna fish sandwich. I finished the leftovers from day one and served with a sliced apple.delicious-lentil-salad
  • Dinner – Delicious Lentil Salad. This was the recipe that won our vegetarian recipe challenge, submitted by Shannon Marentette. The name really does say it all. It was simple to prepare (took about 20 minutes) and includes several fresh, colorful ingredients like bell peppers, parsley, lemon juice, cumin and sun-dried tomatoes. We used dry red lentils and tried to cook them to an al dente stage, similar to pasta, but missed the mark. Nevertheless, this was a very satisfying dish. We had half a crusty wheat roll on the side.
  • Snacks – Skipped the snacks altogether yesterday. See, I really didn’t feel as hungry!

Well there's vegetarian and then there's vegan. That would be no faces and no dairy as in no animal products of any kind.

Haha! Yeah, I was thinking the same thing, Jessie! If she's still eating fish or anything with a face, then it's definitely not vegetarian.

Ok, so how is eating fish a "strictly vegetarian" diet?

I mean, fish is good and all, but it is NOT "strictly" anything

that’s what I was thinking… tuna is got a vegetable! This is now the pescetarian challege.

Hi Judi and Bridget- thank you for the feedback. There’s definitely a gray area and I guess you caught us walking in it. Vegetarians who eat fish are called pescetarians. There are many different iterations of vegetarianism and this is the one we’ve chosen for the week. You could say we learned by example, we have several friends who are vegetarians, all of whom eat fish on a somewhat regular basis. We by no means want to offend anyone with our dietary choices, nor create any kind of confusion. Thanks for following along!

I myself have been a vegetarian that eats fish for a year and a half now. I have been called many titles from a pescetarian to a fishetarian and agree with Brandi there is a bit of gray area here as some do view eating fish vs. meat/poultry as very separate. I would say that typically one that calls themselves a vegetarian avoids all of the above and focuses on a diet of vegetables and grains as well as dairy. Maybe this is the pescetarian challenge and coming from a regular meat eating individual this is itself a challenge.

For a fun take on dinner how about a fajita night with stir fry vegetables! You can add lots of flavor and spices and create a very hearty meal for lunch or even dinner!
