I myself have been a vegetarian that eats fish for a year and a half now. I have been called many titles from a pescetarian to a fishetarian and agree with Brandi there is a bit of gray area here as some do view eating fish vs. meat/poultry as very separate. I would say that typically one that calls themselves a vegetarian avoids all of the above and focuses on a diet of vegetables and grains as well as dairy. Maybe this is the pescetarian challenge and coming from a regular meat eating individual this is itself a challenge.

For a fun take on dinner how about a fajita night with stir fry vegetables! You can add lots of flavor and spices and create a very hearty meal for lunch or even dinner!

Hi Judi and Bridget- thank you for the feedback. There's definitely a gray area and I guess you caught us walking in it. Vegetarians who eat fish are called pescetarians. There are many different iterations of vegetarianism and this is the one we've chosen for the week. You could say we learned by example, we have several friends who are vegetarians, all of whom eat fish on a somewhat regular basis. We by no means want to offend anyone with our dietary choices, nor create any kind of confusion. Thanks for following along!
