What a great idea! Have fun Brandi! As a current Flexitarian, I highly recommend MorningStar Veggie Sausage patties and Boco Cheeseburgers with sweet potato french fries. One of the things I love about vegetarian eating is that you can keep food super simple. Linguine with edamame, olive oil and parmesan cheese or avocado salsa (avocado, mango, tomatoes, & lemon juice) served with your favorite blue corn tortilla chips.

Have tons of fun on your veg adventure!

Thanks Heather and Jim! Cheesy veggie tacos sound amazing. I love Mexican food and plan on incorporating at least one vegetable dish. As far as sticking long-term... you never know!
