I have become vegan for Lent. My challenge is to cook vegan meals for lunch and dinner. During breakfast every day I eat fruit so that’s pretty simple. I love to cook and make non-vegan recipes vegan. It’s a real challenge because my kids aren’t vegan and my husband is vegetarian. He still eats eggs and cheese and that makes things really hard for me. I will continue to cook my vegan meals for the next 5 weeks. I may continue this after Lent because I have lost some weight.
